Shanxi Wheaten Food Culture

Shanxi Province is treated as the land of wheaten food. There is a good saying, “the most delicious wheaten food of the world is in China, and while the most delicious one of China is in Shanxi.” Counting back from the Eastern Han period which kept record on the historical date of wheaten food, Shanxi people has formed many different ways of making wheaten food. Such as rolling, pulling, dragging, cutting, pressing, plucking, boiling, and steaming, sautéing, frying and so on, after over 1000 year’s development. With the hands of Shanxi people, the ordinary taste can be made into stretched noodles, sliced noodles, plucked noodles, Zhuan mian, Lou mian, Maoerduo, Tijian, Liujian in Shanxi Province. At the 1st International Wheaten Food Festival held in Taiyuan, Shanxi Province in 2003, visitors came in streams. The unique wheaten food of different styles and schools are showed together. Especially in the stretched noodle show, the chef pulls a lump of ordinary paste into as thin as a hair, even can go through hole of the needle, which wins the highly praise of the people. In each area of the country or overseas, we can often hear or see wheaten Food Festival mainly on Shanxi. No matter where it arrives, it will be praised by the visitors. As a culture, Shanxi wheaten food is passed down and spread in the world.
