Henan-style Stewed Noodles

People from Henan love their noodles very much. The most popular kind of noodle shop in the province specializes in stewed noodles. This kind of shop is also very popular in other parts of China. The lamb broth is cooked for over five hours. A rich flavor is produced from the combination of the seven or eight other ingredients used. The noodles themselves are very broad, thick, slippery and quite chewy.

The meal is served in sizable bowls that hold a surprising amount of lamb and noodles. Usually, people from outside the province can only finish off a third of a bowl before throwing in the towel. It is now known that stewed noodles were developed during World War Ⅱ. It occurred when a chef was interrupted and had to take shelter from Japanese are raid on Zhengzhou—the province’s capital.
