How to make dumplings

Dumplings (Jiaozi) are Chinese favorite food in China, especially in the north. The foreigners who have come to china always can’t forget dumplings. During the Spring Festival-the Lunar New Year-no food is more festive than dumplings. The following is a recipe for making dumplings. First, have the following ingredients ready: one cup (150 gm.) chopped pork, one half cup chopped Chinese cabbage, some chopped scallion and fresh ginger, soy sauce, salt, and sesame oil, four cups of flour, and one cup of water. For the filling, put the chopped pork in a large bowl. Add scallion, ginger, soy sauce, salt, and sesame oil. Mix in cabbage and stir. Then prepare wrappers as follows. Make the dough in a large bowl. Gradually add water to the flour and knead till smooth dough forms. Cover it with a damp cloth and let it stand for some time. Roll the dough into a cylinder about 3 centimeters in diameter. Cut the roll into small pieces. Using a small rolling pin, roll out each piece into a round thin wrapper. This should be slightly thicker in the center and about 8 cm. place one teaspoon of filling on the center of each wrapper, fold in half and press the edges together. Dumplings can be boiled, steamed or fried on one side (as guotie). In North China, dumplings are dipped in vinegar and often eaten with raw garlic.
